Each year I tweak it a little bit based on what squash is available but I normally use a combination of butternut, buttercup, and honeynut squashes.<\/p>\n\n\n\n<p>This recipe results in a moist, spiced loaf made with roasted squash or pumpkin pur\u00e9e, brown and white sugars, eggs, and a blend of cinnamon, nutmeg, and cloves. Optional raisins add texture to this autumnal treat.<\/p>\n\n\n\n<p><em>Ingredients<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 cups roast squash* (or 15 oz can pumpkin puree)<\/li>\n\n\n\n<li>1 cup packed brown sugar<\/li>\n\n\n\n<li>1 cup white sugar<\/li>\n\n\n\n<li>4 eggs<\/li>\n\n\n\n<li>1 cup vegetable oil<\/li>\n\n\n\n<li>\u00bd cup milk<\/li>\n\n\n\n<li>1 cup whole wheat flour<\/li>\n\n\n\n<li>2 \u00bd cups flour<\/li>\n\n\n\n<li>1 tsp baking powder<\/li>\n\n\n\n<li>2 tsp baking soda<\/li>\n\n\n\n<li>\u00be tsp salt<\/li>\n\n\n\n<li>2 tsp cinnamon<\/li>\n\n\n\n<li>1 tsp nutmeg<\/li>\n\n\n\n<li>\u00bd tsp cloves<\/li>\n\n\n\n<li>\u00be cup raisins (optional)<\/li>\n<\/ul>\n\n\n\n<p><em>Directions<\/em><\/p>\n\n\n\n<p>Preheat oven to 350\u00b0. Grease 4 Handi-foil bread pans<\/p>\n\n\n\n<p>In large bowl, mix together pumpkin, brown sugar, and white sugar. Add eggs 1 at a time then mix in oil and milk.&nbsp;<\/p>\n\n\n\n<p>In separate bowl, whisk together flour, salt, spices, baking powder, and baking soda until combined.<\/p>\n\n\n\n<p>Fold dry ingredients in with wet ingredients in large bowl. Add in raisins and mix well by hand.<\/p>\n\n\n\n<p>Divide evenly into pans (makes about 4 loaves)<\/p>\n\n\n\n<p>Bake for 40-45 minutes. Then check and bake an additional 5-10 mins, if needed.<\/p>\n\n\n\n<p>After baking, let rest in pan for about 1\/2 hour then remove from pan and cool completely.<\/p>\n\n\n\n<p>* <strong>To roast squash<\/strong>: Slice squash in half. Place cut-side down in shallow (10&#215;15) casserole with \u00be cup water.
